The sidrería season starts in January and ends in April-May, depending on the place. Cider (sidra in Spanish or sagardoa in Basque-sagardotegi for sidrería) is always fresh and has to be drunk on the year it´s been made.

A typical sidrería menu would be a cod omelette with peppers, fried cod, T-Bone steak and walnuts and cheese, and all the cider you can drink, taken from the huge barrels that are located behind the tables. You will probably share the table with other people. In some of them people eat standing, a way to socialize and as the original sidrerías were.

Even in off-season you will find many open (business is business) and price is very good (around 30 euros per person, cider included):

http://www.sagardotegiak.com/, also in English, for more info. Astigarraga is the best option for a good sidrería.

There is a direct service from Santander aiport with Alsa buses, but just at 19:10 arriving to SS at 21:55 (the bus does the Asturias-Irun route). If the timetable does not suit your arrival time, there is a direct service to Bilbao Termibus station (14.10,15.10 and 18.10), and from there take a Pesa bus (www.pesa.net)to SS( every hour). The third option would be to take a bus to Santander (every 15 min.), from there to Bilbao and another one to SS.

hope this helps!
