We want to sleep on the train Sunday night from San Sebastian to Barcelona. Is there a night train with sleepers on Sundays (this would be early May of next year)

Yes, there is still a night train. It departs San Sebastian-Donostia at 22:59, arriving in Barcelona at 09:00. You should be able to book a first class compartment 62 days ahead of your planned travel date.
