We are staying at Hermitage Bay for our upcoming honeymoon as well. I'll try to answer your questions the best I can.

-I am not aware of any restrictive times, in terms of adding to the bill. I'm not sure if there are times when food is not available, but I know there are snacks in the afternoon as well. As far as I know, they only charge extra if you are ordering room service or request a private dinner on the beach. I think that one private beach dinner is included with the honeymoon package.

-With alcohol, I have not heard anything about restrictive times or number of drinks. This is not your cheap, Cancun-style all-inclusive resort. I do know they charge extra for some premium wines and liquors, but most reviewers on here have been very pleased with the basic selection.

-I'm not sure if there are many additional "hidden extras". Again, this place is very expensive and the intention was not to nickle and dime you on top of the all-inclusive package. I know that they will drive you to and from the airport if you stay 3+ nights. I know there are extra costs to use the spa (on top of the 1 included couples massage). If you want to do any excursions off-site, that is additional. Other than that, I can't think of many.
